That gap isn’t a technology problem. It’s a deployment problem. Most AI in hospitality right now is chasing the wrong outcomes, chatbots, reservation tools, marketing automation. Useful, maybe. But the kitchen, where 30–40% of a site’s cost lives, is still largely running on gut feel and end-of-shift guesswork.

The operators who will close that gap aren’t the ones with the most tools. They’re the ones who’ve pointed AI at the right problem: what’s actually being wasted, in real time, before the P&L takes the hit.
